Q: What is the difference between green asparagus and white asparagus?

A: White asparagus is essentially green asparagus that has been deprived of light while it grows. Soil is piled on top of the white asparagus as it grows, meaning it can’t photosynthesise and produce chlorophyll, as green asparagus does. In terms of taste, white asparagus has a sweeter, more delicate taste than its green cousin. It’s delicious served with butter and a pinch of white pepper, or with the classic combination of boiled eggs.
